The Best Frituritas de Bacalao

Frituritas de Bacalao (Salted Cod Fritters) are delicious and easy to make...





I'm excited to have you on my blog, thank you for stopping by...Today's recipe is very popular in Cuba. Perfect as an appetizers to have with a cold beer or a great Mojito.


I know there are several versions of this but I'm gonna tell you about mine. I'm going to try keep it simple and easy to understand.


List of Ingredients

(These are all to taste and approximate measurements but trust me at the end the results will be great).

  • 12 - 16 oz Salted Cod or Salted Pollock (Pollock is less expensive and to make fritters you don't need to break the bank on expensive Salted Cod - But make sure whichever one you get is boneless).

  • 1 Large onion of any kind - Finely Diced

  • 5 Cloves of Garlic Chopped

  • 1 Bell Pepper Finely Diced (I prefer Red, but can be any color)

  • 3 Whole Eggs Beaten

  • 1 Tbsp of Tomato Pure

  • About 2 Cups of Flour (All Purpose or Self Raising) (If you use Self Raising you wan't need Baking Soda or Baking Powder)

  • 1 Tsp Baking Soda - 1 Tsp Baking Powder

  • Black Pepper & Paprika

  • 2 Tbsp of White or Apple Vinegar

  • Oil to fry

Place Cod in a large pot with plenty of water, bring to a boil and cook for at least 10 mins. Discard water and repeat the process one more time. Keep some of the water from the second boil. At this time you'll be able to break it apart, shred it with your fingers but not too finely. You'd want to leave it a bit chunky.


Place the drained Cod in a pot with the Onions, Bell Peppers, Garlic, Tomato Pure, Black Pepper, Paprika and Vinegar. Cook for about 10 min on medium heat. Let it cool completely and it's time to make the batter. Combine the flour with the baking soda and baking powder. Start mixing slowly with a spatula the flour, the eggs and the cooking water you had reserved from boiling the Cod. Do this by hand not on a mixer because you don't want to disintegrate the Cod.

The consistency should be thicker than a pancake batter. You want to be able to scoop it out into hot frying oil.

Fry one or two for 2 to 3 mins in 350 degree oil until golden brown. If the batter is right it will fry into semi-round clumps. Slightly smaller than a golf ball is the perfect size.


Notice that there is no Salt as part of the ingredients. Chances are that if the Cod was boiled and rinsed only twice it will still have enough salt. These fritters are supposed to be salty. I like to serve them with Cocktail Sauce and wedges of Lemons or Limes.
