On-Site Paella vs. Drop-Off Catering: Which Fits Your South Florida Event?
Live cooking or prepared-food delivery? Compare guest minimums, venue needs, timing and service details before planning your next gathering.

The short answer
Choose on-site paella catering when you want the cooking to be part of the gathering and your venue can accommodate the chef’s setup. Choose drop-off catering when you want prepared food delivered and have someone ready to organize and serve it. Don Paella’s live catering normally starts at 20 guests. Delivery starts at 10 people, with a minimum of 10 servings per selection.
For a birthday in Miami, an office lunch in Broward or a family gathering in the Florida Keys, the best fit depends on three things: your guest count, the venue’s rules and how much help you need during the event.
What on-site paella catering involves
With live paella catering, a chef prepares the paella at your event. The pan becomes a natural gathering point, and the cooking is part of the experience. Don Paella’s standard paella service includes the chef on-site, buffet service, house salad and bread.
It works especially well when you have a planned serving time and a suitable place for the cooking station. Guests can enjoy the event while the chef handles the paella. Extra waiters, bartenders, appetizers, rentals and other services should be listed separately in your quote.

What drop-off catering involves

With drop-off catering, the food arrives prepared. It can be a practical choice for smaller gatherings, office meals and venues where live cooking is not possible.
Delivery is not the same as a staffed buffet. Decide who will receive the order, place the food on the serving table, serve guests and handle cleanup. Serving, setup, staffing and supplies can be discussed as additional services.
Don Paella delivery orders require at least 48 hours’ notice and phone confirmation. Delivery fees depend on the location and route. Plates, eating utensils, napkins and serving utensils are excluded unless requested. For the Cuban delivery menu, entrées and sides are priced separately. Review the delivery menu and ordering details before selecting your meal.
Four questions to help you decide
1. How many people are you feeding?
Give us your expected guest count, even if it is still an estimate. For a group of 10–19, start by asking about delivery or takeout. For 20 or more, both delivery and live catering may be worth considering.
If you want two different paellas, ask about the minimum for each selection before dividing your total guest count. A 20-person event does not automatically qualify for two 10-person live paellas.
2. What does the venue allow?
Check whether cooking is permitted and ask about the designated setup area, loading access, parking and any equipment restrictions. For a condo or high-rise, tell us about elevators, loading windows and building approval requirements when requesting the quote.
If your venue cannot accommodate live cooking, ask which prepared-food options are available. Resolve that before finalizing the menu.
3. What time should everyone eat?
Tell us the serving time as well as the event’s start time. They are often different. A party that begins at 5 p.m. may not need dinner until 7 p.m.; an office lunch may have a much tighter schedule.
For delivery, coordinate a receiving window and have a contact person available. If the food will need to stay ready for an extended serving period, discuss the setup and any chafing dishes with us in advance.
4. How much hosting help do you want?
Think beyond the main dish. Who will replenish drinks, clear plates or manage the buffet? Live paella service does not automatically include a full team of waiters and bartenders, and drop-off service does not automatically include staff.
You can also explore party equipment rentals for tables, chairs, linens and tableware. Include those needs in the same request so the quote reflects the event you actually want.
Planning for South Florida locations
An outdoor gathering needs a practical weather plan. Discuss a suitable covered cooking or serving area with your venue and caterer before the event; do not assume every tent or indoor space is appropriate for cooking.
For Broward, Palm Beach or the Florida Keys, provide the full event address or, while planning, the city and ZIP code. Travel and delivery arrangements depend on the location. Access instructions and parking details help us plan the arrival.
Common questions
Can I book live paella for fewer than 20 people?
Live catering normally has a 20-guest minimum. For a smaller gathering, ask about delivery or takeout options starting at 10 people.
Does delivery include plates and utensils?
Not unless requested. Include plates, eating utensils, napkins and serving utensils in your request if you need them.
Does submitting a request confirm my order?
No. A quote request starts the conversation. Delivery orders require phone confirmation; event availability and the final service details must be confirmed with Don Paella.
